Highest Routine Inspection Violation Totals
Bacon St. Bagels Mobile Unit — Lynchburg — 10 violations
Bacon St. Bagels Mobile Unit recorded 10 violations during its Aug. 28 routine inspection, the highest total of the reporting period.
The inspector cited inadequate managerial control over cold holding, hot holding, sanitization and date marking. An employee beverage was improperly stored above food and food-service items, while a handwashing sink at the commissary was blocked by cleaning supplies. Both issues were corrected during the inspection.
A lactic-acid sanitizer spray bottle measured 0 ppm and was refilled from the commissary sanitizer dispenser. Hot-holding violations included sausage at 124°F, eggs at 134°F and hash browns at 124°F. The establishment discarded the hot-held foods when it closed at 2 p.m.
Several foods also exceeded the required cold-holding temperature, including cream cheeses measuring as high as 54°F, turkey as high as 47°F and tomato at 46°F. The person in charge told the inspector the items had been in the prep unit for more than four hours, and the affected TCS foods were removed for disposal.
Several foods bearing preparation dates as early as Aug. 11 were also discarded. Other findings included areas with accumulations of grease, debris or food residue; a direct connection between the mobile unit and an outside water spigot; and wastewater leaking beneath the unit while an espresso-machine spray rinser was operating. The operator was instructed to stop using the rinser until the wastewater issue was addressed.
The Health Department also noted plumbing changes and additional equipment and directed the operator to submit a plan review.
Cook Out #98 — Lynchburg — 8 violations
Cook Out #98 received eight violations during its Aug. 27 routine inspection.
An employee placed cooked ground beef into a clean container that was still wet after sanitizing, and the beef was discarded. The inspector also found several foods above the required 41°F cold-holding temperature, including hot dogs at 55°F, cooked chicken at 56°F, cooked ground beef at 57°F, sour cream at 46°F, cheesecake as high as 58°F and watermelon at 56°F.
Some foods were placed on ice, while the sour cream, cheesecakes and watermelon were voluntarily discarded. The milkshake prep cooler itself was holding at 52°F, and its bottom drawer could not fully close. The unit was restricted to non-TCS foods until repaired.
The establishment's time-as-a-public-health-control log had not been completed since Aug. 22, and foods on the line lacked required discard times. The person in charge began recording discard times during the inspection.
Other findings included three cook-line employees with unrestrained hair, containers stacked while still wet, rust on walk-in cooler and freezer doors, a significant amount of bagged and loose trash around the dumpsters and missing or broken floor tiles and worn grout that allowed water to pool.
