Three Lynchburg restaurants record five violations each, while five of 15 establishments complete routine inspections without a violation.
LYNCHBURG, Va. — The Central Virginia Health District conducted food inspections across Greater Lynchburg during the Sept. 22-25 reporting period, including 15 routine inspections that resulted in 36 violations.
Wasabi Japanese Steakhouse & Sushi Bar, Colca's Chicken and Depot Grille recorded the week's highest totals with five violations each. Reber Thomas Soup, Salad, and Sandwiches and E. C. Glass High School followed with four violations each.
Five establishments completed routine inspections without a violation.

Wasabi Japanese Steakhouse & Sushi Bar — Lynchburg — 5 violations
Wasabi Japanese Steakhouse & Sushi Bar recorded five violations during its Sept. 25 routine inspection.
Inspectors found unopened frozen packaged foods showing signs of condensation and refreezing, along with an uncovered container of butter showing signs of mold. The affected items were discarded during the inspection.
Cold-holding and cooling problems were also cited. Several foods, including salad mix, wonton cream cheese and an orange mixture, were measured at 45°F. Rice cooled overnight in large covered pans was measured between 50°F and 57°F and had not reached the required 41°F within six hours.
Inspectors also cited reduced-oxygen-packaged tuna, escolar and snapper that had been thawed while still sealed in their packaging, as well as broken tiles and areas around sinks and the dish machine requiring repair.
Colca's Chicken LLC — Lynchburg — 5 violations
Colca's Chicken recorded five violations during its Sept. 24 routine inspection.
An employee washing dishes used the same gloved hands to handle dirty dishes and unload clean dishes. Inspectors directed the restaurant to retrain employees on handwashing and changing gloves between tasks.
A front-of-house cold-holding unit was not maintaining food at 41°F or below, with the prep unit measured at 51°F and several foods above the required temperature. Management was directed to use smaller quantities and time as a public health control until the unit could be repaired.
Inspectors also cited dishes stacked while still holding water and food particles, damaged cutting boards and a silicone spatula, and chicken juices on the floor beneath shelving in the walk-in cooler. Several corrective actions were taken during the inspection.
Depot Grille — Lynchburg — 5 violations
Depot Grille recorded five violations during its Sept. 23 routine inspection.
An employee was using the same set of tongs for raw and ready-to-eat foods, including chicken, burgers, salmon and ribs. Additional tongs were obtained during the inspection so separate utensils could be used.
The restaurant's dish machine was also not reaching the required sanitizing temperature. Inspectors measured a maximum temperature of 125°F and directed the restaurant to use its three-compartment sink until the machine could be repaired.
Inspectors also cited deeply grooved or stained cutting boards and inaccurate dish-machine temperature gauges.
Reber Thomas Soup, Salad, and Sandwiches and E. C. Glass High School recorded four violations each. Reber Thomas Comfort Kitchen and Rotisserie, The Dogwood Cafe and William & Henry followed with three each.
El 32 and Rodeway Inn each recorded two violations.
