Among the more significant findings, employees were observed washing a blender in a handwashing sink designated exclusively for employee hand hygiene. Inspectors also cited improper food storage after finding raw shell eggs stored above limes and raw tuna stored above ready-to-eat lettuce, creating a potential cross-contamination risk.
Additional violations included:
- Frozen mussels lacking required shellfish identification records.
- Raw tuna being thawed in reduced-oxygen packaging.
- Unlabeled squeeze bottles in the kitchen.
- Numerous fruit flies observed in the back kitchen and near serving utensils.
- An ice scoop stored on a dusty surface, creating a contamination risk.
- Flooring in several areas of the restaurant in need of repair.
Several violations were corrected during the inspection, including food-storage concerns, improper thawing practices and utensil storage issues. Management was directed to address pest-control concerns, labeling deficiencies and facility repairs within specified timeframes.
Inspectors also noted improvements in date-marking procedures compared with previous visits.

The most significant violation involved potential cross-contamination. Inspectors observed an employee handling raw hamburger patties before touching sliced tomatoes and a fully cooked burger with the same gloves. The employee was instructed to discard the contaminated tomatoes, re-cook the burger and change gloves before handling ready-to-eat foods.
Additional violations included:
- No employee on site held a certified food protection manager certification.
- Wet wiping cloths stored on countertops rather than in sanitizer solution.
- An ice scoop stored with the handle touching ice in a service bin.
- A large mixer bowl showing rust, cracks and other surface damage.
- Significant ice and residue buildup inside several chest freezers.
- A mop sink hose connected without proper backflow protection.
Several violations were corrected during the inspection, including sanitizer-bucket preparation, proper storage of utensils and removal of the hose connection. Management was directed to obtain a certified food protection manager certification within 90 days, and address equipment concerns and freezer maintenance.
Inspectors noted that food temperatures throughout the facility were within required ranges at the time of inspection.
