Highest Routine Inspection Violation Totals
La Cocina de las Catrachitas — Lynchburg — 14 violations
La Cocina de las Catrachitas recorded 14 violations during its Aug. 24 routine inspection, the highest total of the reporting period.
Among the findings, employees had not received verifiable training on employee-health reporting requirements, and employee beverages were stored above food, single-service items and a preparation table. Raw chorizo was stored above yucca and shredded cheese, raw eggs were above produce, and the same tongs were being used for raw and ready-to-eat foods.
Temperature-control issues included a large container of horchata that had not cooled properly and was discarded, cut avocados being held at room temperature and rice measuring 108°F and 115°F on a steam table without the required time marking. Several foods lacked date markings, while portioned salsa and rice bearing an Aug. 9 preparation date were discarded.
The restaurant also lacked written procedures for using time rather than temperature to control food safety, and its menu did not contain the required consumer advisory for burgers that can be ordered undercooked. Other findings involved unlabeled chemical bottles, medications stored above food-related items, beef tripe thawing at room temperature and the absence of a small-diameter probe thermometer. Several violations were corrected during the inspection.
The Pink Flamingo Play Cafe — Forest — 5 violations
The Pink Flamingo Play Cafe received five violations during its Aug. 20 routine inspection.
The establishment's employee-health policy did not contain all required reporting information. Sanitizer in the three-compartment sink measured 0 ppm chlorine, while a sanitizer bucket measured 25 ppm. Both were corrected to 100 ppm during the inspection.
The inspector also found ham at 49°F, feta at 52°F, turkey at 48°F and cheese cubes at 48°F in an overfilled mini refrigerator. Cold brew had been steeping at room temperature since the previous evening. The affected foods and cold brew were discarded. Open packages of turkey and ham also lacked date markings and were discarded.
All five violations were marked corrected during the inspection. The report noted that the establishment's dish machine was out of service while awaiting a replacement part.
